What is the proper wedding gown for a second marriage?

I am planning my second wedding, which will not be a formal ceremony. My husband to be would like to wear black jeans, some type of white dress shirt, black cowboy hat and cowboy boots.
I would like to wear a dress that's elegant but not poofy and extremely formal. I'm 44, with a 16 year old son, and my fiance' is 43 with a 8 and 14 year old. I'm a size 6, 5'6" and weigh 135 lbs.
